6-8 tbsp. oil or shortening

Remove excess moisture from chicken pieces with a clean paper towel. In electric skillet, melt 6-8 Tbsp. shortening, or use same amount of canola oil. Generously salt and pepper each piece of chicken.

Heat oil in 375º skillet. Dredge each piece of seasoned chicken generously in flour on both sides and place in hot oil. Fry about 15 minutes at medium high temperature; turn pieces over and fry other side 15 minutes. Turn heat down to about 325º and simmer for another 30 minutes, turning as needed. Do not cover skillet if you want chicken to be crisp.

Drain chicken on platter covered with paper towel. Keep warm in 170º (warm) oven until ready to serve.
