2-4 lb (1-2 kg) salmon fillet, with or without skin
2 tsp olive oil
1 clove garlic, minced
1 tbsp minced fresh ginger root
3 tbsp brown sugar
1 tsp salt
1/2 tsp pepper
1 tsp ground cumin (most important)

To cook this salmon you can use either the barbeque or oven.

Preparing the salmon:
With the skin side down, score the fish every two inches across the fish but not all the way through the fish. In a small bowl, combine the oil, garlic and ginger. Brush the salmon fillet with the oil mixture. In another small bowl, combine sugar, salt pepper and cumin. Rub this into the scored slits of the fillet. Allow the salmon to marinate for 20 minutes

For barbeque:
Soak untreated cedar plank in water for several hours before cooking. Place the salmon on soaked plank, then place plank on rack of barbeque. (Make sure barbeque is hot) Close lid and barbeque for 15 to 25 minutes, or until salmon is cooked through. Do not turn fish while cooking. Lift salmon off plank and serve. This salmon recipe has a nice smoked flavour.

For oven:
Place marinated salmon on a baking sheet and cover with foil. Bake in a preheated 450º oven for 20 minutes or until fish flakes. Serve

Left over salmon can be used in sandwiches or salads.
