Ingredients: 1 1/2 lb. beef roast salt, pepper, and garlic powder 1 envelope Lipton onion soup mix Worcestershire sauce 2 onions, peeled and sliced 3 carrots, peeled and chopped fresh rosemary fresh thyme 3 bay leaves 2 cups Guinness stout 28 ounces diced tomatoes 1-2 cans field peas, rinsed and drained mini pie crusts and crusts for lids 1 egg, beaten

Directions:Season beef roast generously with salt, pepper, and garlic powder. Slice one onion and place in bottom of crockpot. Place roast on top and sprinkle with onion soup mix and several dashes of Worcestershire sauce. Add carrots and herbs to pot. Poor beer and tomatoes over everything and cook on low for several hours - until beef is tender and falling apart. Remove bay leaves and discard. Shred beef. Process roasted vegetables in food processor by pulsing a few times, but don't puree. Add beef, vegetable mixture, peas, and roast liquid to a large pot and reduce on stovetop until mixture is thick. At this point mixture can be frozen for later use if you wish. To cook pies, fill mini pie crusts with beef and vegetable mixture and top with additional pie crust, sealing edges. Brush tops with beaten egg and bake for 45 minutes - 1 hour, until pie crusts are golden brown. Allow to cool and drizzle with ketchup (Aussies call ketchup "dead horse" - I know. Don't ask me.) to serve. These are delicious! |
