1 lb ground beef
¾ cup chopped onion
1 ½ tsp chili powder
½ tsp salt
½ tsp garlic salt
1 can (16oz) diced tomatoes, un-drained
1 can (15 ½ oz) red kidney beans, un-drained
¾ cup quick cooking rice, uncooked
¾ cup water
3 tbsp chopped green pepper
¾ cup shredded cheddar cheese

Directions:
Directions:
Cook ground beef and onion until onion is tender; drain fat. Add chili powder, salt and garlic salt. In a large pot, add meat, tomatoes, beans, rice, water and green pepper.

Cover and simmer; stirring occasionally for 20 minutes. Top with cheese. Cover and heat until cheese melts, about 3 more minutes. Serve with crushed corn chips.
