1 lb Italian sausage
1 cup chopped onion
2 cloves garlic, minced
5 cups beef broth
1/2 cup red wine
2 cups canned tomatoes
1 cup sliced carrots
1/2 tsp. basil
1/2 tsp oregano
14 oz can tomato sauce
11/2 cups sliced zucchini
1 package frozen cheese tortellini (I use small round cheese ravioli)
3 Tbsp. chopped parsley
1 medium green pepper chopped

Directions:
Remove sausage from casing and brown. Remove from pan and discard all but a tsp of fat from pan. Sauté onions and garlic until tender. Add broth, water, tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring to a boil, reduce heat, simmer uncovered for 30 min. Skim fat and add remaining ingredients. Simmer, covered 35 - 40 min. I cook the ravioli separate and add to pan right before serving. To serve sprinkle with parmesan cheese. Magnifico!
