2 lbs. beef, cubed
3 medium potatoes, cubed
1 hot pepper
1 small onion
1 tablespoon curry powder
3 cups water
1 teaspoon minced garlic
1 tablespoon rum
1/4 cup vegetable oil
2 bay leaves
2 tomatoes
Grated nutmeg
Salt to taste

Directions:
Directions:
Heat vegetable oil over medium to high heat.
Add onions, garlic and pepper then stir for a couple minutes.
Add curry powder and simmer for a few more minutes.
Add meat and potatoes and all other spices.
Add 1 cup water stirring constantly for about 3 minutes.
Cover and cook for another 15 minutes, add 2 cups water until cooked.
Cool and serve with rice, roti or breads.
(If you need a more saucy dish, add more water and salt if desired.)
