1 1/2 lb. mild Italian sausage
3/4 tsp. minced garlic (I always add more)
1 small onion, chopped

2 stalks celery, chopped
1 c. chopped green pepper
5 c. good beef broth
16 oz. tomatoes
1 bay leaf

1/2 cup fresh basil, cut thin
1 1/2 cup. fresh spinach
1/4 tsp. rosemary

At time of serving, add your choice of pasta. We like tortellini! Garnish with fresh parmesan.

Brown first 3 ingredients. Then add celery and pepper, saute 5 minutes. Add everything else and simmer 20 minutes. Add cooked pasta at the end and serve.

This became a Watson favorite the first time Mrs. Cox made it for us! It is a fun recipe to use our frozen basil in and our home grown canned tomatoes. If you don't think you will use all the soup, hold back some of the tortellini because the tortellini will absorb all the liquid if it sits too long. Sometimes I will just add the tortellini to the individual bowls with the fresh parmesan.
