Ingredients: Quesadillas: 2 flour tortillas 2 Tbsp unsalted butter 2 large eggs 1/4 c chopped yellow onion 1/4 c chopped red bell pepper 1/4 c chopped yellow bell pepper salt and pepper (to taste) 1/2 c shredded cheese (I used mozzarella)
Crema: 1/2 c sour cream 1/4 c vegetable or canola oil 2 Tbsp white vinegar 2 garlic cloves 1 c loosely packed cilantro salt and pepper, to taste
garnish: 1/2 Roma tomato, chopped or sliced

Directions:Quesadillas: Melt butter in a pan. Add chopped onion and peppers. Saute until soft, about 3 to 4 minutes, over medium heat. In a small mixing bowl, beat eggs. Pour over cooked veggies. Cook to your liking like for scrambled eggs. Place on a plate, set aside. Taste when slightly cooled. Season as needed. Preheat large skillet over medium heat. Place one tortilla in the skillet. Top with half of the cheese. Top with cooked eggs with veggies. Top with remaining cheese. Top with the remaining tortilla. Fry for 2 minutes, or until the bottom tortilla slightly crisps up and get golden brown spots. Flip and cook on the other side. Place on a plate. Top with crema and fresh chopped tomato.`
Crema: Place all ingredients in a food processor and process on low until smooth. Use as topping on quesadillas. Refrigerate for up to 1 week. |
