Crust:
1 C graham cracker crumbs
1/4 C sugar
1/4 tsp nutmeg
1/4 C butter, melted

Cheesecake:
1 envelope unflavored gelatin
1/4 cold water
1 8-oz pkg cream cheese, softened
1/4 C sugar
1 C eggnog
1 C whipping cream, whipped

Directions:
Directions:
Crust: Combine crumbs, sugar, nutmeg and melted butter. Press onto bottom of a 9" spring form pan.

Cheesecake: Soften gelatin in water. Stir over low heat until dissolved. Combine cream cheese and sugar, mixing at medium speed on mixer until well blended. Gradually add gelatin and eggnog. Chill until slightly thickened. Fold in whipping cream. Pour over crust. Chill until firm.

My mother would make homemade eggnog to use in this recipe. A single batch of eggnog makes 4 cups. My mother would often have to make a double, or even triple, batch to make sure she had 1 cup left for the cheesecake. Dad and I would appear to look innocent of wrong doing, but fail miserably.
