Impossible Taco Pie Recipe

1 lb ground beef
1/2 cup chopped onion
1 envelope taco seasoning mix
1 can chopped green chilies, drained
2 C milk
1 1/3 C Bisquick baking mix
4 eggs
2 tomatoes, sliced
1 C shredded Monterey Jack or Cheddar cheese (about 4 oz)

Directions:

Preheat oven to 400ºF

Lightly grease 10" pie plate. Cook and stir ground beef and onion in skillet until beef is brown. Drain. Stir in taco seasoning mix. Spread in pie plate. Sprinkle with chilies. Beat milk, baking mix and eggs until smooth. Pour into plate. Bake 35 minutes. Top with tomatoes. Sprinkle with cheese. Bake until cheese is golden brown and knife inserted in center comes out clean, 8-10 minutes longer. Cool 5 minutes. Serve with sour cream, chopped tomatoes, and shredded lettuce if desired.
