8 medium-sized sweet potatoes
1/3 cup butter
2 T brown sugar
1/2 cup cream
1 T sherry

Directions:
Directions:
Boil sweet potatoes with salt added until tender. Cool slightly, then peel, and mash them. Whip, adding butter, brown sugar, cream and sherry. Turn into 2 quart casserole and insert as many marshmallows as desired. Bake in 350º F oven about 25 minutes or until top is brown.
