1 1/3 cups boiled shin of beef or veal
1/2 cup butter
3/4 cup flour
2 1/2 cups beef stock
2 1/4 tsp. unflavored gelatin
lemon juice, cream, pepper, salt and curry powder to taste
egg yolk
egg white
bread crumbs
vegetable oil for deep frying

Directions:

1. make a very thick white sauce with butter, flour and stock.
2. Add the meat which must be very tender and shredded into small pieces and stir well.
3. Add the gelatin dissolved in a little stock.
4. Add the egg yolk mixed with small amt. cream.
5. Finish by adding pepper, salt, curry and lemon juice. Maggi, a Dutch sauce, may also be added and is found in some grocery stores in spice section.
6. Spread the sauce on several plates and allow to cool and stiffen, overnight if necessary.
7. Form croquettes about 1" thick and 3" long, or may be shaped into 3" balls. Roll in bread crumbs. Roll in egg white mixed with a little water and then roll again in bread crumbs.
8. Deep fry in hot oil until golden brown.
Serve with spicy mustard.
