1 lb. Italian sausage links
(hot or sweet)
Large bunch broccoli rabe
4 medium potatoes
2 large onions
2 large red bell peppers
8 oz. fresh mushrooms
2 cloves garlic, minced
1 cup white wine
Olive oil
Red pepper flakes
Salt & Pepper
Grated Parmesan cheese

Directions:
Directions:
Fry sausage links thoroughly over medium heat in a little olive oil, drain, slice into coins/disks, and set aside.
Boil broccoli rabe for 1 -2 minutes, drain and set aside.
Peel and cut potatoes into bite size cubes, slice onions into strips, seed and cut peppers into bite size pieces and slice mushrooms. Salt & pepper potatoes, onions, peppers, and mushrooms and roast in a 450º oven until nicely browned.
Over medium heat, pour enough olive oil to cover the bottom of a large skillet, heat oil with minced garlic and white wine.
Add sausage, broccoli rabe, vegetables, red pepper flakes and salt & pepper to taste. Heat thoroughly until much of the wine is reduced and while hot serve on a large platter, drizzle with a little olive oil and top with grated Parmesan cheese.
