Ingredients: Cups: 2 c. all-purpose flour, plus more for dusting work surface 2 1/2 Tbs. granulated sugar 1 tsp. cocoa powder 1/2 tsp. cinnamon 1 pinch nutmeg (optional) 1/2 tsp. salt 1/4 c. butter, melted 1 egg white 1/2 c. sweet Marsala wine Vegetable oil cooking spray
Filling: 12 oz. whole milk Ricotta cheese, strained 8 oz. Mascarpone cheese 1/2 c. powdered sugar 1/3 c. mini semi-sweet chocolate chips powdered sugar (for dusting), melted chocolate, crushed pistachios

Directions:Preheat oven to 400º F. Add first six ingredients to food processor and pulse. Add melted butter and pulse to combine. Add egg white and pulse again. With processor on low add wine just until mixture starts to come together. Divide dough into two pieces, shape into balls and place in ziplock bags. Chill 30-60 minutes. Filling: Mix together ricotta and mascarpone cheese. Fold in powdered sugar. Cover and chill 30 minutes. Roll each chilled dough ball out on lightly floured surface into 14-inch circle, 1/8-inch thick. Cut into circles with a 2 1/2-inch biscuit cutter. Transfer to an ungreased mini muffin tin. Press evenly into sides and bottoms. Spray with oil. Bake 11-13 minutes until golden. Transfer to cooling rack. Once cool dip tops in chocolate then into pistachios, and allow chocolate to set. Pipe chilled filling into cups, sprinkle with mini chips, and dust with powdered sugar. Best served within 2 hours. Store in refrigerator. |
