1 lb. linguini
2 tins flat anchovy fillets
(in olive oil)
1/2 cup olive oil
6 garlic cloves, minced
1/2 cup Italian breadcrumbs
Red pepper flakes
Ground black pepper
Parsley (fresh or dried)
Lemon juice & zest

Directions:
Directions:
Boil water in a large pot, add salt and linguini. Cook linguini to al dente or to your preference. Drain pasta and set aside.
While the linguini is cooking, add 1/2 cup olive oil into a deep skillet and heat on medium. Add garlic, one tin of anchovies, red pepper flakes and black pepper and simmer until anchovies are melted and the sauce is smooth.
When the linguini is done, add about half of the linguini and about half of the breadcrumbs into the sauce in the skillet, mix well with a little pasta water if too dry. Repeat with remaining linguini and breadcrumbs.
Plate linguini and top with cut up pieces of anchovy fillets from the second tin.
Squeeze a little fresh lemon juice over pasta and top with lemon zest.
Serves 4 - 6
