Homemade Limoncello Recipe

10-12 lemons, peeled
1 bottle good vodka
2 c. sugar
3 c. water

Peel the outer rind off 10-12 lemons (depending on size).
You want to carefully avoid the white part of the rind as that is bitter. A vegetable peeler works fine.
Add peels to a seal-able container (preferably a glass container with a tupperware-type top) and add vodka. Stir it a bit, cover, and let sit in a cool spot for one week to a month.
Once you are done infusing your vodka with the lemon peel, mix sugar and water in a pan.
Place over medium heat and stir until the sugar dissolves - just a few minutes.
Once it is dissolved remove from heat and let cool.
In the meantime you can strain your vodka mixture to remove peels and particles.
The limoncello should be nice and clear.
Once you've strained the vodka mixture add the sugar water and stir well. Bottle and store in freezer. Once bottled, I like to add one of the curled peels back to the limoncello. It looks nice in the bottle.
