8 oz. cream cheese, softened
3/4 c. sour cream
1 onion, thinly sliced
3 Tbs. olive oil
1 green pepper, diced (optional)
1 clove garlic
6 oz. deli roast beef, roughly chopped
2 1/2 c. shredded provolone cheese, divided

Directions:
Directions:
Preheat oven to 375º F.
Combine onions & olive oil in a skillet over medium heat. Cook, stirring frequently, allowing onions to caramelize until soft and golden (about 15-20 minutes, you can keep busy prepping the other items while you wait).
Add the diced pepper (if using) & garlic to the caramelized onions and cook 2-3 minutes more or just until slightly softened.
In a bowl, combine cream cheese, sour cream, caramelized onion mixture, roast beef, and 2 cups of cheese. Place into a greased oven proof pan. Top with remaining cheese and bake 20-25 minutes or until golden brown on top.
Serve with bread, sliced hoagie rolls or tortilla chips.
