2 tbsp Canola/Olive Oil
1 Stalk Green Onion, Chopped
1/2 lbs prepared boneless salt cod - soak in cold water overnight; drained; add fresh water boil for 5 minutes; drained, flaked with fork;
2 boneless chicken beast - Cube
3 cups water
1 cup coconut milk
1 chicken cube
1 sprig fresh thyme
1 medium onion
2 clove garlic
3 cloves
1 bay leaf
1/2 tsp black pepper (to taste)
2 tbsp margarine
1/4 Jamaican Pumpkin, peeled, seeded, and diced
2 cups Rice - Brown, or parboiled, or basmati or quiona

Directions:
Directions:
In a Medium saucepan over medium heat, saute chicken, onions, garlic, cloves, in oil for 2 minutes, than add cod, black pepper, bay leaf for 1 minutes.
Add all remaining ingredients and cook for 30 minutes or until rice is tender and all liquid absorb.
