1 whole chicken, rinsed and patty dry
3/4 Cup softened butter
3 whole lemons
4 sprigs fresh rosemary
salt and pepper

preheat oven 425ºF
1. zest 2 lemons
2. strip the leaves off one rosemary sprigs and chop finely
3. in a bowl add the softened butter, finely chopped rosemary, salt and pepper and mix.
4. On a lined baking sheet or roasting pan place the patted dry chicken breast side up. Smear the softened butter mixture all over the chicken and under the skin.
5. cut the lemons in half and squeeze the juice of one lemon all over the chicken.
6. Place the six lemons and the 3 sprigs of rosemary in the cavity of the bird
7. Roast for 1 hour 15 minutes or until done.
Skin should be golden brown and juices should be sizzling.
