1/2 c (60 g) oat flour
1/2 c (70 g) sweet rice flour
1/3 c (67 g) pure cane sugar
3 T (21 g) almond meal
1 tsp baking powder
1/2 tsp salt
2 large eggs
1/4 c + 2 T (88 ml) buttermilk
1/4 c (60 g) unsweetened applesauce
2 T (28 ml) oil
1 1/2 tsp vanilla extract
6 T jelly

TOPPING: 1/2 - 1 c powdered sugar

Preheat oven to 350º. Combine oat flour, sweet rice flour, cane sugar, almond meal, baking powder, and salt in a large bowl, mixing well. In another bowl, whisk the eggs together. Then add the buttermilk, applesauce, oil, and vanilla extract. Whisk until well combined.

Pour the wet mixture into the dry ingredients and stir with a large wooden spoon until just combined, being careful not to over mix (stop when you no longer see dry flour).

Spoon the batter into the donut molds, filling only halfway. Dot about 2 tsp of jelly going around the centerline of each donut. Fill the molds with the remaining batter just below the top of each mold.

Pour the wet mixture into the dry ingredients and stir with a large wooden spoon until just combined, being careful not to over mix (stop when you no longer see dry flour).

Bake for 18-22 minutes until lightly golden brown around the edges. A toothpick inserted in the center should come out clean. Let cool in the pan for 5 minutes and then remove donuts to a cooling rack. Cool completely before topping. Sift powdered sugar over each donut to finish.
