1/2 c (60 g) oat flour
1/2 c (70 g) sweet rice flour
1/3 c (67 g) pure cane sugar
1/4 c (28 g) almond meal
1 tsp baking powder
1/2 tsp salt
2 large eggs
1/4 c + 3 T (105 ml) buttermilk
3 T (45 g) unsweetened applesauce
2 T (28 ml) oil
2 tsp (10 ml) vanilla extract

Basic Glaze:
1 c (125 g) powdered sugar
2-3 T (30-45 ml) milk

Chocolate Glaze:
1 c (120 g) powdered sugar
3 T (15 g) unsweetened cocoa powder
3-4 T (45-60 ml) milk

Frosting:
2-3 T (28-45 ml) heavy cream or milk
2/3 c (80 g) powdered sugar
3 T (42 g) butter, softened
1/4 c (20 g) unsweetened cocoa powder

Directions:
To Make Donuts: Preheat oven to 350º and grease donut pan. Combine the oat flour, sweet rice flour, cane sugar, almond meal, baking powder, and salt in a large bowl, mixing well. In another bowl, whisk the eggs together. Then add in the buttermilk, applesauce, oil, and vanilla extract. Whisk until well combined. Pour the wet mixture into the dry ingredients and stir with a large wooden spoon until just combined, being careful not to over mix (stop when you no longer see dry flour).

Spoon batter into the donut molds, filling to just below the top of each mold. Bake for 18-22 minutes until lightly golden brown around the edges. A toothpick inserted in the middle should come out clean. Remove from oven and let cool in the pan for about 5 minutes. Remove donuts to cooling rack and allow to cool completely before glazing or frosting.

To make glaze: Mix all ingredients together until smooth. Add more milk if a thinner consistency is desired. Invert the donut into the glaze or drizzle the glaze over the donut.

To make the frosting: Mix the ingredients together until fully combined and smooth. Add more milk if needed. Spread the chocolate frosting on the donuts.
