Salad:
4 c broccoli crowns, finely chopped
1/4 c red/purple onion, finely chopped or thinly sliced
1/2 - 1 c of red grapes, each grape cut in half
8 oz can of water chestnuts, drained & cut in halves or quarters
4-6 slices of bacon, cooked and crumbled
1/2 - 1 c unsalted, roasted sunflower seeds
3 T dried cranberries, cran-cherries, golden or regular raisins

Dressing:
2 cloves garlic, minced
1/2 c reduced fat sour cream
2 tsp sugar or alternative sweetener (honey, agave, stevia - may need to adjust based on sweetness; sweeten to taste)
1/2 c low-fat mayonnaise or Veganaise
4 tsp apple cider vinegar
black pepper to taste

Directions:
Directions:
Whisk dressing ingredients together in a large bowl. Add broccoli, water chestnuts, bacon, onion, and cranberries, and stir to coat with dressing. It should look like it has a little too much dressing. Cover and refrigerate overnight to allow broccoli and onions to absorb dressing and flavors to meld. Before serving, stir in sunflower seeds and grapes. If salad is too dry, add a little milk and stir well.
