1/4 cup cider vinegar
2 Tbsp. brown sugar, packed
1 Tbsp. prepared mustard
1 tsp. salt
1/4 tsp. black pepper
1/8 tsp. crushed red pepper
Dash Tabasco sauce
1/2 cup chopped onion
1/2 small lemon, sliced
1 1/2 tsp. Worcestershire sauce
2 Tbsp. water
2 Tbsp. chili sauce
1/2 cup ketchup
3 lb. Chicken pieces

To make barbecue sauce:
Combine vinegar, sugar, mustard, salt, black pepper, red pepper, Tabasco sauce, onion, lemon, Worcestershire sauce and water in a saucepan. Bring to a boil, reduce heat and simmer gently for 20 minutes. Add chili sauce and ketchup, bring just to a boil; remove form heat. (This recipe doubles easily if you want extra sauce.) Preheat oven to 400°F. Place chicken skin side down in a large shallow roasting pan. Spoon some barbecue sauce over chicken. Bake 30 minutes, turn chicken skin side up. Brush liberally with barbecue sauce and bake 30 minutes longer, or until tender, basting often. Serve with hot rice and more of the sauce, if desired. Makes 4 servings.
