2 cups all-purpose flour
1/2 cup granulated sugar
3 tsp. Baking powder
1/2 tsp. Baking soda
1/2 tsp. Salt
1/2 cup finely chopped nuts
1 egg
3/4 cup milk
1/4 cup vegetable oil or melted shortening
1 1/2 cups mashed ripe bananas

Preheat oven to 350°F. Grease a 9 x 5 x 3 inch loaf pan. In a large bowl combine flour, sugar, baking powder, baking soda and salt. Stir with a fork until well mixed. Mix in chopped nuts. Beat egg, milk and oil together. Stir in mashed bananas. Add to dry ingredients and beat for about half a minute. Batter will still be lumpy. Turn into prepared pan and bake in preheated oven for 65 minutes or until a toothpick inserted in centre comes out clean. Cool for 5 minutes and remove from pan. Cool on a rack, then wrap in foil and place in a breadbox until the next day. Flavor will be better the second day. After two days, place in the refrigerator or freezer.
