1 lb. Italian sausage, sliced
1 onion, chopped
2 cloves garlic, minced
1 Tbs. olive oil
2 cans (14.5 oz each) fat-free reduced sodium chicken broth
1 broth can water
1 can (15 oz.) cannellini beans, rinsed
1 can (14.5 oz.) stewed tomatoes, undrained
1 cup rotini pasta, uncooked
1 1/2 cup (more, if desired) baby spinach leaves
1/2 cup shredded mozzarella cheese

Variations:

Add 1 cup of carrots as an addition to the vegetables.

Add one small can of V-8 juice to jazz up the soup's tomato base.

Pasta is pasta. If you prefer a smaller size pasta, then substitute for rotini.

Cook sausage, onions and garlic in oil in large saucepan for 10 minutes, stirring frequently. Add the next 4 ingredients (or 5 if you are adding carrots, or 6 if you are adding carrots and V-8 juice) and bring to a boil. Stir in pasta and cook 8 minutes or until tender. Remove from heat. Stir in spinach and cover. Let stand 5 minutes. Ladle into bowls and top with cheese.

So OK. This recipe appeared on the side of a box of Premium Crackers. Never mind its origin, it is a wonderful soup. You just need to hope there will be leftovers. It is better the next day and even better on the third day. Heat a bowl of the leftover soup gently. Eat and weep.
