2 Tbsp. butter
2 cups of uncooked basmati/jasmine rice
3 cups water
1 Tbsp. lemon juice
1/3 cup finely chopped cilantro
Salt to taste

Directions:
Directions:
Combine rice, water, butter and salt in a large sauce pan and place over medium high heat. Bring to a boil.
Reduce heat to simmer, cover and cook for 12-15 minutes.
Add cilantro and lemon juice; fluff with fork and serve.

This is a great side dish for seafood and chicken dishes. Steamed rice with lemon juice and cilantro, it’s so refreshing and very simple to make! A rice cooker would be useful for this but you can always use a large sauce pan and cook the rice on the stove top. For this dish, I think basmati is the best rice to use for; it doesn’t get sticky. But if you don’t have basmati, jasmine or any long grain rice is fine too.
