2 lbs of chicken thighs & wings – skin on
2 Large Carrots
3 Stems of Celery
1 teaspoon of peppercorns
2 bay leaves
5 cloves of garlic
1 3-inch piece of ginger – peeled and sliced
1 yellow onion – sliced in half; skin on (wash 1st)
Salt to taste

Directions:
Directions:
In a large skillet (w/ a dash of olive oil) brown chicken thighs and wings over medium high heat, making sure not to crowd the pan – about 3-4 mins each side.
Place the chicken in a stock pot along with any juices in the pan. Run cold water over the chicken and fill the pot leaving a few inches at the top.
Add remaining ingredients (don’t worry about chopping the garlic, onion,s celery or carrots – just make sure everything is washed first!)
Bring to a boil then set to simmer.
Allow the broth to simmer over medium/low heat for 4-6 hours. You will need to add water as the amount will deplete as you continue to simmer. Make sure the ingredients are always covered with at least a few inches of water/broth to spare.
Strain and reserve the stock in a pot. Place in fridge overnight.
Reheat and use in soups or for cooking!
