1 box yellow cake mix
5 eggs
3 sticks butter
2-8 oz. pkgs. cream cheese, softened
3 c. powdered sugar
2 tsp. vanilla
2 c. chopped pecans

Preheat oven to 325º F.

The Base:
Blend the cake mix, 1 egg, and 1 stick of melted butter to form a thick dough. Press dough evenly into a 9x13 inch pan or casserole dish. Set aside.

The Filling:
In a large mixing bowl, beat the cream cheese until creamy and free of lumps. Add the remaining 2 sticks of butter (at room temp) and cream them together.
Add the eggs and vanilla and combine. Add the powdered sugar 1 c. at a time, allowing each to be incorporated before adding the next. Pour this mixture over the base and spread evenly. Sprinkle the top with the chopped pecans. Place on center rack of oven and bake for 45 minutes to 1 hour. The top should be lightly golden brown.

Allow the cake to cool for about 30 minutes. Drizzle the top generously with caramel.

May be served warm or cold. Refrigerate unused portions. May be reheated in the microwave. Ooey Gooey Cakes are a southern favorite for parties and potlucks. They come in all flavors. This is a particularly good one! Other favorites include vanilla, chocolate, and lemon, but the possibilities are endless.
