1 small onion (chopped)
1 small bell pepper (chopped)
1 stick margarine or butter
1 17-ounce can cream style corn
1 17-ounce can drained whole corn
1 package cornbread mix
1 egg
1 cup of shredded cheese (any kind)
2 packets of sugar substitute or 3 tbsp. sugar (your choice)
1 small jar pimiento (optional - When I have red bell pepper, I use it.)
**Options: I omit sugar & use 1/2 stick margarine

Prep:
Heat oven to 350ºF, chop onion and bell pepper, open cans, measure cheese and sugar.
Cook:
Put onion, bell pepper, and butter in microwave safe bowl. Cook in microwave on high for three minutes.
Mix by hand - cream style corn, whole corn, cornbread mix, egg, cheese, sugar, and pimiento and add the onion, bell pepper, butter mixture.
Bake:
Pour into casserole dish and bake in oven at 350º for 45 minutes.
