Small portion:
2 beaten eggs
4 tbsp milk
1/2 tsp salt
2 c flour
1 tbsp oil

Grandma size:
12 eggs
3 tbsp oil
1 c warm water
1 tbsp salt
8 c flour (approx.)

Directions:
Directions:
Beat eggs until light. Add the rest of the ingredients and knead well. The dough should be fairly stiff. Cover and let rest for about 20 minutes. Roll out very thin and place on a tea towel on the table to partially dry (do not let dough dry too much because it will be impossible to cut it). Sift a small portion of flour over the entire surface, cut into strips and stack one on top of the other and cut it with a sharp knife.

Notes from GM:
-it's much easier to roll up in a jelly roll fashion and cut up.
-I let my dough rest in a plastic bag, it seems to work better for me.

When cooking noodles with milk:
First scald the milk in one kettle. In another kettle drop noodles in boiling water until they are cooked (taste & you'll know). Drain and add to your scalded milk and let sit for about 20-30 minutes before serving.

Grandpa Bennie liked to put a dab of butter on top of the hot milk - it made it run down his chin! ha!
