Crust
1 pkg. Amaretti cookies
1/2 stick butter, melted

Filling
2 lbs. cream cheese, softened
1 stick butter
1 1/2 c. sour cream
1 1/2 c. sugar
5 eggs
1/2 c. Amaretto
1 tsp. almond extract
3 heaping Tbs. all-purpose flour, sifted

Topping (optional)
1 qt. strawberries, sliced
1/3 c. amaretto liqueur

Directions:
Preheat oven to 425º F.
Finely grind cookies and add melted butter. Press mixture into bottom of 10" springform pan. Chill 30 minutes while you prepare batter. Beat cream cheese, butter, and sour cream. Add sugar. Add eggs, one at a time, making sure mixture is smooth after each. Add amaretto, almond, and flour and continue beating until very smooth and creamy.

Pour batter into chilled springform pan (will come to top) and place in roaster with water bath. Bake 15 minutes, then reduce temperature to 275° F and continue to bake 60-90 minutes. Remove from water bath to wire rack. While cake is cooling, macerate sliced strawberries in amaretto.

Arrange strawberries on top of cooled cheesecake and bake at 350° F for 7 minutes.

Transfer back to wire rack and allow to cool completely. Refrigerate at least overnight.
