1/2 lb. bacon chopped
2 1/2 lbs. ground beef
2 C onion chopped
1 C green pepper chopped
6 garlic cloves finely chopped
3 - 2 lb. 3 oz cans Italian plum tomatoes
3 - 6 oz cans tomato paste
1 1/2 C dry red wine
5 t oregano
5 t basil
1 1/2 C water
1/2 C chopped parsley
2 t thyme
1 bay leaf crumbled
2 T salt
pepper

Fry bacon until crisp in wide 6 qt. saucepot. Remove bacon and all but 2 T fat. Save both bacon and extra fat, add ground beef and cook until brown. Stir in onion, green pepper & garlic, cook for 10 min. Add more bacon fat if needed. Mash tomatoes & add to meat sauce along with tomato paste, bacon, 1 C wine, 4 t each of oregano & basil and all remaining ingred. Bring to a boil, reduce heat & simmer uncovred for 3 hrs. Ten or 15 min. before serving, add rest of oregano & basil & wine.
