Fresh Peach Pie:
1 c. sugar
2 tbsp. flour
1 tsp. cinnamon
5 c. sliced fresh peaches
1/2 tsp. almond extract
2 tbsp. butter
Homemade pastry

Canned Peach Pie:
4 tbsp. cornstarch
1/2 c. peach syrup
1 tbsp. lemon juice
5 c. worth drained canned peaches
1 tbsp. butter
2 tsp. cinnamon
1/2 tsp. almond extract
1/2 c. sugar
pinch of salt
Homemade pastry

Directions:
Directions:
1) Preheat oven to 400ºF.

Fresh Peach Pie:
2) Mix sugar, flour and cinnamon together, then gently mix with sliced peaches.

3) Mix in almond extract.

4) Pour filling into bottom pie shell and put lumps of butter on top.

5) Put top pie crust on pie.

6) Bake at 400ºF till golden, approximately 45-50 minutes.


Canned Peach Pie:
2) Make paste of cornstarch, sugar, and a little peach syrup in a small pot.

3) Add remaining syrup and cook over heat until thick, stirring constantly.

4) Remove from heat, and at lemon juice, butter, almond extract, salt, peaches and cinnamon.

5) Pour filling into bottom pie shell and put lumps of butter on top.

6) Put top pie crust on pie.

7) Bake at 400ºF till golden, approximately 45-50 minutes.
