Ingredients: Filling: 8 oz. package chopped dates 1 cup water ¼ cup sugar 2 t lemon juice 1 cup finely chopped walnuts
Dough: 1 cup butter, softened 2 cups light brown sugar, firmly packed 2 each eggs 3 ½ cups flour ½ t double acting baking powder ½ t salt ¼ t baking soda

Directions:Filling: Boil all ingredients except walnuts. Reduce heat and simmer until thick, 10 to 12 minutes. Fold in walnuts. Let cool to room temperature.
Dough: Cream butter, sugar and eggs. Combine dry ingredients. Add to creamed mixture, beating just until blended. Divide dough into thirds. Wrap in waxed paper and chill. Roll out each third on waxed paper into a 12 x 8 inch rectangle. Spread each rectangle evenly with 1/3 of the date mixture ( about 2/3 cup). Starting with the 12 inch side, roll up dough jelly roll fashion. Repeat with remaining materials. Wrap in waxed paper. Chill or freeze. Cut each roll into 1/8 to ¼ inch slices. Baked in a preheated 350 degree oven for 10 to 12 minutes until brown. |
