3/4 c. flour
pinch of salt
3 1/2 tbsp. butter
1/4 c. grated cheese
water
1 onion
5 slices of bacon
1 tbsp. butter
3 med. potatoes, cooked
2 eggs
1/2 cup milk
salt
freshly ground pepper
paprika

Directions:
Directions:
Sift flour and salt together in a bowl. Cut in the butter until mixture resembles fine breadcrumbs. Stir in the grated cheese and sufficient water to form a stiff dough. Roll out pastry to fit a pie plate. Refrigerate while preparing filling.

Peel and finely chop onion. Dice the bacon. Heat butter in small fry pan and quickly cook the onion and bacon until lightly browned. Remove from heat. Dice the potatoes and add to the pan. Mix. Arrange ingredients in the prepared pie plate. Beat together eggs, milk, salt, and pepper and pour over the ingredients in the pie pan. Sprinkle the top with paprika. Bake at 425º for 20 minutes. Serve hot or cold.
