1 lb. thin spaghetti
4 T. extra virgin olive oil
2 cloves garlic, chopped
1 tsp. fresh sage, chopped
1 lb. mixed mushrooms, chopped roughly
1 15-oz can cannellini beans, drained
Salt and pepper to taste
1 T. parsley, chopped
1/2 c. fresh parm cheese, grated

Directions:

1. Bring a large pot of salted water to boil for the pasta.
2. In a large skillet, heat the olive oil on medium high heat and add the mushrooms. Stir and cook until softened and nicely browned. Reduce the heat and add the garlic and sage and cook for 2-3 minutes.
3. Add the beans, salt and pepper and stir to combine.
4. Cook pasta according to package directions, drain and reserve a little of the cooking liquid.
5. Add the pasta to the bean and mushroom mixture along with a little of the pasta cooking water and stir to coat the pasta with the sauce.
6. Remove from the heat and toss with the parsley and cheese.
