2 stalks chopped celery
1 1/2 cup sliced Anaheim peppers
3/4 cup chopped onion
2 cans chicken broth
1 can (10oz) chunk white chicken
1 can blackeye peas
1/2 cup rice
2 teaspoon Cajun seasoning
1/2 teaspoon pepper
5 medium tomatoes peeled and sliced
4 Tablespoons Butter
1 Bay leaf
