Several Idaho potatoes
onion, half of a medium one
butter
salt and pepper

Directions:

Peel and slice in 1/4 " slices. Season. Slice onion into rings. Melt butter (at least enough to cover bottom of iron skillet well). Add potatoes, layered with the onion rings. Let potatoes cook...do not stir, but with the tine of a fork, gently lift a slice of
potato to check it and when bottom layer of potatoes is golden brown, put lid on skillet and put into a 350º F. oven. Bake about 30 minutes or until soft. Pour potatoes onto serving platter reversed with browned potatoes on top. The steam from having the lid on makes them soft.

Karl was the owner/chef of the Blue Bell Inn in Blue Bell, PA. He was a neighbor who willingly shared this recipe which was a favorite from his restaurant. These potatoes always remind me of Mother's smothered potatoes. Delicious!!
