2 C. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 C. apple juice
1/4 C. brandy
1/4 C. whipping cream
1 C. butter, softened
1 C. sugar
4 large eggs
2 C. mincemeat
Sifted powdered sugar

Directions:

Grease and flour one 10" fluted tube pan.
Preheat oven to 350 degrees.
Sift together dry ingredients and set aside.
Put the apple juice, brandy and cream and mince meat in another bowl and set aside.
In a large bowl cream the butter and sugar together until light and fluffy. Add eggs one at a time, and beat well after each addition.
Add the flour mixture and the mincemeat mixture to creamed mixture, alternately, and mix until well incorported.
Turn batter into prepared pan and bake for 45-50 minutes or until cake pulls away from sides of pan.
Cool cake completely on rack, invert and remove to platter.
Sprinkle with powdered sugar.

Dad loved mince meat. Somewhere there is a recipe for the homemade version, but Mother usually used store bought canned mince meat. She preferred to bake cake over pie, so when Dad, a huge Mark Twain fan, found this recipe, it became a favorite for both of them.
