4# chuck roast
2 tbls shortening
Salt and pepper
1 can tomato paste
¾ cup chopped onion
2 tbls sugar
1 can water (tomato paste can)
1 tsp cinnamon
½ tsp ginger

Directions:
Directions:
Brown meat on both sides in hot shortening, season to taste with salt and pepper
Drain excess fat from pan.
Combine tomato paste, vinegar, onion, sugar, 1 tsp salt, spices and bay leaf pour over meat
Cook covered in preheated 350 oven about 3 hours until tender.
If necessary skim excess fat from sauce. Serves 6-8
