2 c. sugar
1/2 c. white corn syrup
1/2 c. water
dash of salt
2 egg whites, stiffly beaten
1 tsp. vanilla

Directions:
Directions:
In saucepan, stir sugar, corn syrup, water, and salt until dissolved. Boil to medium-ball stage (240º). Slowly pour 1/3 of mixture over stiffly beaten egg white, beating constantly.

Cook remaining syrup to very hard-ball stage (263º). [To test, add several drops of mixture to water. The mixture will form a firm ribbon that bends when lifted from the water.] Beat the syrup mixture with the candy mixture, continue beating. When mixture holds its shape when dropped from a spoon, add vanilla. Drop from teaspoon onto a greased cookie sheet. Swirl each piece to peak.

{Double boiling takes longer but a failure proof way to make fluffy divinity).
