3 jars (6 oz) artichoke hearts
1 tbsp. minced onion (instant)
1 clove garlic (crushed)
2 cups grated cheese - cheddar, jack, mozzarella or any combination - sharp is best
1/4 cup bread crumbs (sifted)
4 eggs (beaten)
2 tbsp. parmesan cheese
Italian seasoning to taste (1 tsp.)
Salt and pepper to taste

Directions:
Drain oil from 1 jar of artichoke hearts into a small pan - add instant onion and crushed garlic and let stand to absorb liquid. Just before using, sauté lightly.
Drain oil from other 2 jars and chop contents of all 3 jars. To chopped hearts, add grated cheese, bread crumbs, eggs, parmesan cheese, seasonings and the oil-onion-garlic mix. Mix well.
Grease bottom and sides of pan (9 inch sq. or 11 x 7 or 12 x 8) using butter or margarine.
Spread mixture in pan - Bake at 325º for 30 min. or until set. Turn off heat and let stand for 5 min. Good hot or cold.
