1 T sugar
1/2T tsp baking soda
2 eggs
1-2 tsp cardamom (or vanilla)
¾ c margarine or butter (melted) (Amma only used butter)
milk, as required

Mix the dry ingredients together in a bowl. In another mixing bowl beat the eggs,
melted butter, and vanilla extract.
Gradually add the ingredients together to make a smooth thin batter.Then add milk slowly as needed, and, whisk together to make a batter of runny consistency.
Let the batter stand for 30 minutes, to let everything settle.
Butter a skillet, and heat over medium heat until the butter is fragrant; pour in enough batter to coat the skillet in a thin layer (pancakes should be very thin). Allow to cook until the bottom is lightly browned, then turn the thin pancake over to brown the other side.
Amma had a "reverse" skillet! This is like a skillet turned inside out, with, the round part inverted. This is where she would cook the Pönnukökur. She would have the batter near the stove and would heat the pan then dip the hot pan into the batter and put it back on the stove. That is how she got the lace like pattern on the Pönnukökur. Super thin and even better tasting than they were to look at.
It is key that when you pour the batter into the pan, you need to rotate the pan. This helps the batter spread thinly and quickly over the surface.
Once cooked, flip it on a plate to sprinkle with cinnamon and sugar and roll up tightly or stack on a plate for folding in whipped cream and preserves or fruit.

Now we're talking'! I can remember sitting in the kitchen with Amma or my Mom and eating them as fast as they cooked them. Sometimes they would use brown sugar and sometimes plain sugar, as well sometimes throw in some cinnamon just for a twist.
Occasionally when there are a few left over's I will throw them in a pain with melted butter, orange juice and grand Mariner for an Icelandic twist to Crepe Suzettes!
Amma would be mortified. I know all the Bjornson Siblings loved their Pönnukökur. Always with that "Sock Coffee" Amma had brewing. Perhaps selective memory, but, my recollection of coffee is with Pönnukökur, or Klenur and watered down sock coffee, or, fresh milk from the barn.
