4 zucchini (6 inches long)

Filling:

4 oz. cream cheese
2 Tbs. Mayonnaise
1/2 cup finely chopped pistachios
1/4 tsp grated orange rind

garnish - sweet red pepper slivers

Directions:
Directions:
Wash zucchini. With a peeler, cut off lengthwise strips for decorative effect. Remove ends from zucchini and discard strips. Cut into 1 inch slices. With melon baller or small spoon, remove some pulp form each slice to form a 3/4 inch cavity. Cook cups in lightly salted boiling water for no more that 2 minutes. Drain and cool under running water. Drain on paper towels and refrigerate.

Filling: In small bowl, blend together cheese and mayonnaise. Stir in nuts and orange rind. Spoon cheese mixture into cups and refrigerate until cold.
