1/2 lb. ground turkey (or lean ground beef)
1 tbsp. taco seasoning
1/4 c. water
3/4 c. canned black beans, drained and rinsed
16 wonton wrappers
1 jar salsa con queso (you will not use the whole jar)
1 c. salsa
1 c. low fat shredded Mexican cheese

Preheat oven to 375º. Lightly mist 8 cups in a muffin tin with cooking spray and set aside. In medium skillet brown ground turkey (or beef) and drain any excess fat. Stir in taco seasoning and water, and heat to boiling. Turn down to a simmer, and add the black beans.

Push a wonton wrapper into the bottom of each of the 8 sprayed muffin cups. Spoon a teaspoon of queso salsa into each wonton wrapper. Spoon some of the meat/beans mixture into each cup (using about 1/2 of the total mixture). Add of spoonful of salsa to each cup, and then sprinkle with about 1/2 of the Mexican cheese. Press another wonton wrapper on top, placing it diagonally over the other so that the corners do not line up. Repeat the previous layering ending with the shredded Mexican cheese. Bake 18-20 minutes until golden brown.
