INGREDIENTS for CHICKEN BATTER

Peanut oil

1/2 cup flour

1/4 cup cornstarch

1/2 cup cold water

1 inch ginger root, minced, or 1 tbsp powdered ginger

1/4 cup dry dehydrated onions or 1 onion grated

1/4 tsp black pepper

2 tbsp brandy or sherry

2 tbsp soy sauce

3 whole chicken breasts, boned and skinned. Or chicken tenders

1 cup macadamia nuts

SWEET AND SOUR SAUCE

2 tbsp corn starch

4 tsp soy sauce

3/4 cup cold water

2/3 cup cider vinegar

1 cup sugar

1 green pepper diced



Combine all ingredients except green pepper, and bring to a boil. Reduce heat and simmer till thick, stirring constantly. Add green pepper and serve with chicken. Garnish with nuts and scallions.

1.Combine 2 tbsp peanut oil in blender with all ingredients except chicken and nuts.
2.Cut chicken into strips about 1" wide and 2" tall.
3.Soak chicken in batter about 20 minutes.
4.Deep fry in peanut oil until done.

Serve with rice and sauce and garnish with nuts. Scallions are optional but add color and flavor.

This comes from an old recipe book that was part of a set that my mother let me "steal" from her when I went away to college at BYU. They were virtually new then, but all five of them are now very well worn, dog eared, annotated, and covered with a fine speckling of dried sauces which accumulated over years of being propped open while beating, whipping, and stirring was underway. In other words, they have been used exactly as you hope you will use every cookbook you buy. I started making this recipe in college and it has become a family favorite.
