1 tbsp. dried basil or 2 tbsp. chopped fresh basil
2 tomatoes, diced (seeds removed)
1/2 green seedless grapes, halved
1 leek, julienned
1 tbsp. finely chopped shallots
1 pint whipping cream
1 ounce pernod
6 sliced oyster mushrooms (shitake can be substituted)
1 c tomato sauce
2 cloves garlic, minced
1 tbsp. butter
2 tbsp. chopped fresh parsley
parmesan cheese
1 lb pasta

Directions:
Directions:
In frying pan melt butter and sauté garlic and shallots for 30 seconds or until fragrant. Add Julienne of leeks, tomatoes, basic, mushrooms and grapes. Saute 2 min, add pernod and ignite. Add cream and tomato sauce. Increase heat to high and reduce to 1/3 or desired consistency. Add parsley. Toss with freshly cooked, drained pasta and sprinkle with parmesan.
