1/4 c cold butter, cubed
1/4 c chopped shallots
1 tsp chopped garlic
1 tbsp. chopped fresh thyme
1 tbsp. chopped fresh tarragon
1 tbsp. chopped fresh rosemary
1/2 c bourbon
2 c beef stock
2 tsp balsamic vinegar
Salt and freshly ground pepper

Directions:
Directions:
Heat 1 tbsp. of the butter on medium heat in pot, reserving remaining butter. Stir in shallots, garlic, thyme, tarragon and rosemary. Saute 1-2 min or until shallots soften. Add bourbon and bring to boil. Reduce to 2 tbsp. about 3-5 min. Add stock and bring to boil. Simmer 15-20 min or until reduced to 1/2 c. Swirl in 1 tsp balsamic vinegar, reserving the rest. Season with salt and pepper.

Reheat bourbon sauce and whisk in remaining butter and reserved balsamic vinegar. Season well.
Serve drizzled over steak.
