1 butternut squash
2 T olive oil
1 Lg spanish onion
1 carrot chopped
2 Stalks celery
2 bay leaves
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp thyme
1 cup orange juice
1 cup apple juice
1 1/2 cup tomato juice
1 1/2 cup water

Directions:
Directions:
bake squash meat side down on cookie sheet with olive oil
at 350 deg for 1 hr
saute spanish onion, chopped carrot and celery with bay leaves, cinnamon, nutmeg and thyme
- then add 1 c orange juice, apple juice, tomato juice and water
cook together until carrots soften -
when squash is done - soft- add to mixture - ladel into blender - blen to desired consistancy.
add salt and pepper to taste.
