1 lb frozen calamari rings
2 tbsp olive oil
1 lg carrot, diced
1 shallot, chopped
1 onion, chopped
1 garlic clove, chopped
1 can fire roasted tomatoes, diced
1/r cup dry white wine
1 tbsp tomato puree
bay leaf
pinch of fennel
pinch of dried cayenne pepper
salt & pepper
pinch of thyme

Directions:
Directions:
Defrost calamari, rinse with cold water, and dry with a paper towel.
Heat olive oil in a skillet, add carrots, shallots, onion, and garlic. Cook, stirring occasionally, for about 10 minutes, or until vegetables are starting to soften.
Add calamari and saute for 3 minutes, stirring frequently.
Add tomatoes, wine, tomato puree, thyme, cayenne, bay leaf, fennel, salt, and pepper, and stir to combine. Bring to a boil, then turn down heat to low and cover. Cook covered over low heat for 25-30 minutes.
Serve hot on plain white rice, or with orzo pasta.
